Weekly Grocery List + prep!

I finally got grocery shopping today! Between 3 places (I’ll explain why) I only spent $65.00 for 2 people. FOR TWO PEOPLE. Whoever says eating healthy is expensive has got another thing coming! This week wasn’t even totally “healthy” per say. I did stock up on a few goodies for myself and my mom, as everyone needs to do occasionally. This is my list:

Shopping

Everything highlighted in yellow is what was on sale this week. Do you see how insanely expensive the peaches and grapes were?? OMG I wanted to die at the counter. There is a reason why MOST weeks I buy frozen fruit in bulk for smoothies and bananas/apples/oranges. They are the cheapest and most versatile. I was planning on buying canteloupe since it was on sale but for the price of 2.25 they were tiny as heck and no one wants that.. I could have ate two for breakfast myself! 5.00 breakfast? No thanks. That’s not how college kids do it.

Yes I bought Daiya shreds, I love them so much. I have been having a bad grilled cheese craving lately so I decided to get some. It usually lasts a while as long as I keep it in a very tight container so I don’t have to use the whole gosh darn bag within a week. My tummy can’t handle that.

Meal prep this week was pretty easy. I’m currently soaking my beans for the chilli I will be making tomorrow using my new pressure cooker (in love). Also tomorrow I will be making some chickpea spinach burgers! Today I made some sriracha coated baked tofu with garlic and pepper for sandwiches. I’ll tell you one thing, I love the pre-pressed tofu 1000x better than the stuff I bought before Superstore got that in. Ugh it’s a mess and way more expensive. Noted! Other than that I still have a bunch of produce from last week hanging around in my fridge, that’s why you don’t see any greens on that list. Currently there are 2 bunches of spinach sitting, waiting to be eaten soon.

Goal update:
Oil pulling has still been going well, I didn’t do it twice this weekend as I was at my boyfriends and forgot to bring it with me. Fail. My teeth have consistently been getting whiter so I’m pretty excited! Also my tooth pain has subsided. BONUS. There is a reason why it has on the back of the Vega One container that it “may cause detox/cleanse-like effects”. JEEZE. Today will be my third day of the first week taking it and holy moly does it cleanse. You get my drift. Feeling pretty good though! I was doing well waking up early but last night I woke up at 3am and didn’t fall back asleep till my boyfriend left for work at 6am. He doesn’t like soft beds so when he stays over he tosses and turns and kicks me off the bed, thus ensuring I don’t sleep. So after he left I went back to bed for another hour before studying. I haven’t done my liquid day yet. Not 100% sure when I will. Could be tomorrow but I do close at work (2am) so that might not be convenient. We will see! As for tea, WINNING! Doing well April, keep it up.

Portabella mushroom love

Okay so maybe I was a bit late on this post. But to be truthful I had it all typed out on my phone and accidentally erased it all *facepalm*. Story of my life.

So anyways, portabella mushrooms. They are my guilty pleasure (and like 20 calories so yes please) and if they weren’t so damn expensive I’d have a fridge full of them. Specifically just to make these sandwiches, hot or cold outside I don’t care they are AMAZING. Like drooling to the point where you almost need a bib. Embarrassing? Maybe. Nontheless I will never hide my love for Bella’s.

Open faced Hummus Bella sandwich:
Serves 1-2 depending how hungry you are or if there is a side

1 portabella mushroom
Hummus
2 thin slices of onion
BBQ sauce
Red wine vinegar
Daiya – mozza
2 slices of bread

Preheat oven to 400F
1. Remove stem from Bella’s and slice into 8 thick pieces.
2. Coat a plate with red wine vinegar – just enough to cover the bottom. Put some BBQ sauce on and blend into a paste.
3. Marinate the Bella’s for 10 mins on each side.
4. Slather a generous amount of hummus on both pieces of bread. Place on baking sheet hummus side up.
5. Add slices of onion on each slice of bread.
6. Place 4 slices of mushroom on each piece of bread. If there is sauce left over drizzle on top of mushrooms.
7. Sprinkle some daiya mozza on top of the sandwiches and bake for 10-15 mins. Checking often around 10 mins.

I eat mine as I would toast. I tried cutting them but then the juice doesn’t quite dribble down your face like it should 😉 I understand why they call Bella’s the steak of veggies!

Smoothie life + recipe!

Currently I am typing this out on my phone, sipping a smoothie and creating my mom’s and I workout plan for the week… All at work. I work at a boutique in my little town and even though it’s 10am and 25C, it’s been dead. What a shame. I hate days like this, they go by so much faster when there’s a mob of people in here.

In case any of you were wondering what kind of smoothie I’m having, here is the recipe

1 banana
1/2 cup raspberries
1/3 cup rolled oats
1 tbsp chia seeds
1 scoop vanilla hemp protein
1/2 cup hemp milk (use whichever non-dairy milk you wish. You will never see soy milk in any of my recipes due to an allergy but feel free to use whatever!)
2 1/2 cups water

This filled a 24 oz mason jar, but then again I kind of throw stuff into a blender and hope it turns out edible. When I do find a recipe I like I keep changing it up to see what works best. Sometimes I like to put dates in there for extra sweetness or some coconut palm sugar depending how my sweet tooth is that day.

All in all it’s a delicious and creamy smoothie perfect for taking on the go, just add a straw!

I’m considering doing a post on golden berries. I found them at Bulk Barn the other day and I cannot stop eating them. They are a bit expensive but definitely satisfy my sour candy craving any day. I’m not sure about the health benefits of them but whatever I can find you can be sure I’ll post it!

New to juicing

Juicing

Hello all you people who have read my one lonely single post so far (so no one). Hehe.

I figured I should probably keep writing no matter how few people read this thing, I like doing it at least. Consistency is key!

So a few weeks ago I bought the Omega 8006 Juicer because I’ve read so many articles about how much easier it is to get the minerals/vitamins from fruits and veggies into you through juice (it goes straight into your bloodstream). Since nothing else has worked to cure my iron deficiency other than IV infusions, which is straight into your bloodstream anyways, why couldn’t juice work? I know $300 is a lot to spend on a “maybe” thing, but I would much rather spend the money now and have it forever rather than spend $100 and have it crash in a year. Maybe that’s just me.

I’ve been juicing maybe 3 times a week for 2 weeks so far but all the juices I’ve been making are… less than tasty (to put it nicely). Lemon, ginger, parsley… meh. Carrot, orange and kale… not my fav. I think it’s because I haven’t experimented enough yet but to be truthful, they are horrible. Needless to say, I need help folks. I know that apple works well because it’s so sweet but they aren’t in season and I’m trying to keep costs to a minimum.

Any help would be greatly appreciated, comments, recipes and links!
